咖啡小泡芙

牛奶340毫升
即溶咖啡粉20克
蛋黃4個
砂糖100克
低筋麵粉30克

牛奶50毫升
水50毫升
無鹽奶油(切小塊)45克
中筋麵粉60克
全蛋(打散)2個

1 在鍋中放入牛奶、水和切小塊的無鹽奶油,以小火煮滾後離火

2 篩入低筋麵粉

3 用木勺快速拌勻,攪拌到看不到白色麵粉時,再放回爐上加熱

4 邊加熱邊攪拌成麵團,且鍋底有白色薄膜後離火

5 將步驟4移到鋼盆內,再分次加入蛋液,用木勺打勻

6 打到木勺提起麵糊會緩緩滑落的狀態

7 將麵糊裝入有平口擠花嘴的擠花袋內

8 在舖有烘焙紙的烤盤上(或在已抹油的烤盤上),擠出直徑約3.5公分的圓形麵糊,再將手指沾些水,把表面突起的部份抹平

9 噴上水霧後,放入已預熱200℃的烤箱中,烤20-25分鐘

10 製作[咖啡卡士達醬]。

11 將步驟10裝入有泡芙專用花嘴的擠花袋內(沒有泡芙專用花嘴也沒關係,用圓的平口花嘴就可以了,但最好用小一點口徑的花嘴,比較方便填入泡芙內)

12 將泡芙的底部或側邊用筷子戳個小洞
